The Instant Pot Duo Evo Plus makes me happy - every day
I enjoy cooking with my Instant Pot Duo Evo Plus every time I use it, which is nearly every day. Although I must admit, that I haven't tried the souvide program yet. But I the pressure cooking program and the proofing program very regularly with incredible results. I've also tried the Rice/Grain program, the steam functionality, the baking option, the slow cooking program and I've made yoghurt. Everything works fine. Only the baking functionality doesn't produce fully satisfactory results. It seems that the inside of the pot doesn't get hot enough all around to actually bake bread. In the end the dough is cooked through, but there is no crust to speak of. I haven't tried muffins and the like, which probably come out better, because nobody expects an acutal crust on this kind of baked good.
And there is one thing to consider: The pot probalby won't save much cooking time on the weekday meals, because it takes quite long to heat up to high pressure. BUT it still makes cooking so much easier, because I don't need to monitor the cooking process as closely as I do when cooking on a stovetop. I put the ingredients in the pot, close the lid, program the pot and press "start". After that I can do whatever needs doing and only have to return to the pot after it's finished cooking. I also enjoy the delayed start functionality, because it means, that I can enjoy freshly cooked porridge for breakfast without the need to get up earlier to prepare it. It also means, that the oat get the soaking required to make the nutrients better available.
